I love pound cake and I love lemon, so this Lemon Loaf Cake was right up my alley. It was also a cinch to put together. Perfect. It definitely is better the 2nd day. And, it’s a wonderful compliment to a strong cup of dark tea.
I simply dressed my slices with a dollop of whipped cream. My kids, however, decided to go with raspberry preserves on top.
The only problem with this cake, was it was just too small for our pound cake loving brood. I’m sure that this should be a good thing. But, I would have enjoyed just one more slice – grin.

Mmm, I bet this was terrific with raspberry jam. My girls really liked this cake with strawberries.
