Tuesdays with Dorie….Irish Soda Bread

This was a cinch to put together.  Less than five minutes from bowl to oven. 

Esi wasn’t as interested in this recipe because she had sampled some Irish Soda Bread recently that was seasoned strongly with caraway.  She didn’t like that too much.  So, it took me some persuading to get her excited to sample this one.  I told her it’s like a gigantic biscuit and of course, that brought a smile to her face.  Esi likes biscuits.  Or, I should say, she likes a little biscuit with her jam.  Esi likes jam!

Mine came out quite rustic looking.  I like it.  I probably should have baked my loaf just a few minutes longer or made my gash in the top a bit deeper, but it’s quite tasty.  Tangy and slightly chewy.  Great with a cuppa tea!  And the kids loved it (with lots of jam).

    Your bread looks wonderful – this rustic look makes it almost elegant!
    I love this recipe and my family also do!
    We had it with dried fruit the first time and with raisins, chocolate chips and natural vanilla extract, and again with raisins and cinnamon…Can’t stop making it!

    This really was like a large biscuit. Of course, since it is all one loaf, it is less work than biscuits!

    This is a great bread for dipping into soup or stew, or for eating out of hand with butter and jam. Glad you all enjoyed it – your loaf turned out beautifully.
