I had a bunch of bananas sitting ugly on my counter that I needed to use. I rarely have leftover bananas, but for some reason the kids didn’t eat this bunch. I have never been successful with banana bread. I can’t seem to get it done in the center without drying out the ends. So, I searched high and lo for a banana cake recipe. I remembered that I had seen a banana Bundt cake online somewhere, so I thought it best to check out the Food Librarian’s blog. Sure enough, she had a post featuring Dorie Greenspan’s Classic Banana Bundt Cake recipe from BFMHTY.
I chose to do a lemon glaze because I knew my kids would love it, but I wouldn’t do it again. The cake is great without it and I felt that the glaze got in the way. Hubby agreed. So this recipe is a keeper, sans the glaze.
